🧀 Paneer Lababdar

A rich, creamy North Indian paneer dish made with aromatic spices, onions, tomatoes, and curd. Paneer Lababdar pairs wonderfully with butter naan, roti, or jeera rice, making it a restaurant-style treat you can easily prepare at home.


🔪 Preparation

  1. 🛢️ Heat 1 tablespoon oil in a pan. Add:

    • 🧅 2 medium onions (roughly chopped)

    • 🍅 2 cups tomatoes (roughly chopped)

    • 🌿 1 tbsp jeera (cumin)

    • 🌿 4 cloves

    • 🌿 2 bay leaves

    • 🌿 4 black cardamoms

    • 🌿 4 green cardamoms

  2. Add ½ tsp salt 🧂, sauté everything until soft.

  3. Cool the mixture completely. Blend with leftover water 💧 into a smooth puree 🥣. Set aside.


🍳 Make the Lababdar Gravy

  1. 🛢️ Heat 2–3 tablespoons oil in a fresh pan. Add:

    • 🌿 1 bay leaf

    • 🌟 Pinch of hing (asafoetida)

  2. Sauté briefly, then add 🧄 1 tbsp ginger garlic paste, and cook until raw smell disappears.

  3. Pour in the prepared onion-tomato puree 🥣.

  4. Add spices:

    • 🌼 ½ tsp haldi (turmeric)

    • 🌶️ ½ tsp red chili powder

    • 🍃 1¼ tsp coriander powder

    • 🍂 ½ tsp garam masala

    • 🌶️ ½ tsp deggi lal mirch

    • 🧂 ½ tsp salt

  5. Mix well and sauté for 2–3 minutes ⏱️.

  6. Add 🥄 2 tbsp curd on low flame 🔥, stir continuously.

  7. Cover and cook until the gravy thickens slightly.

  8. Once it begins to leave the sides of the pan, add 💧 ¾–1 cup water to adjust consistency.

  9. Add 🌾 1 tsp crushed kasuri methi and mix well.


🧀 Finish with Paneer

  1. Add:

  • 🧀 200 g cubed paneer

  • 🧀 3–4 tbsp grated paneer

  1. Mix gently and cook for 1–2 minutes on low flame 🔥.

  2. Garnish with 🌿 fresh coriander leaves and more 🧀 grated paneer.


🍽️ Serving Suggestions

Serve hot with:

  • 🍛 Steamed rice or jeera rice

  • 🍞 Butter naan

  • 🫓 Phulka or roti
