🥒 Bharwa Torai (Stuffed Ridge Gourd)

Bharwa Torai is a traditional North Indian sabzi that's light, nutritious, and loaded with flavor. Made with ridge gourds and everyday spices, it’s the perfect example of how humble ingredients can come together into a comforting, homely dish.
🛒 Ingredients:
🥒 4–5 medium-sized Torai (Ridge Gourds)
🧅 1 grated onion
🛢️ Mustard oil – for cooking
Spices (to taste):
🌕 Haldi (Turmeric powder)
🌿 Dhaniya (Coriander powder)
🌶️ Mirchi (Red chili powder)
🌶️ Garam masala
🍋 Amchur (Dry mango powder)
🧂 Namak (Salt)
👩🍳 Steps to Prepare:
Step 1️⃣: Prep the Torai

Wash and peel the ridge gourds.

Make a lengthwise slit in each — don’t cut all the way through.

Set them aside for stuffing.
Step 2️⃣: Make the Masala Stuffing

Heat mustard oil in a kadahi (iron pan if possible).

Add grated onion and sauté until golden brown.

Add haldi, dhaniya, mirchi, garam masala, amchur, and salt.

Stir well to make a thick, aromatic stuffing.
Step 3️⃣: Stuff the Torai

Let the masala cool slightly.

Gently stuff it into the slits of each torai, pressing in carefully.
Step 4️⃣: Cook the Bharwa Torai

In the same or a fresh pan, heat a little more mustard oil.

Place the stuffed torai gently in the pan.

Cover and cook on low flame, turning them every few minutes.

Cook for about 10–12 minutes until soft and flavorful.
