Vegetable Rawa Uttapam

These mini Rawa Veg Uttapams are a perfect fix for busy mornings or healthy snacking. Packed with semolina, curd, and colorful veggies, they’re quick to make, nourishing, and loved by all age groups.
🧂 Ingredients
🔸 For the Batter:
🥣 1 cup Rawa (Sooji / Semolina)
🥛 ½ cup Curd (fresh & thick)
💧 ½ cup Water (adjust as needed)
🧂 ½ tsp Salt
🧪 ¼ tsp Baking Soda (optional, for fluffiness)
🔸 For the Topping:
🧅 1 small Onion (finely chopped)
🍅 1 small Tomato (finely chopped)
🌶️ 1 Green Chili (finely chopped, optional)
🥕 2 tbsp Carrot (grated, optional)
🌿 2 tbsp Coriander Leaves (optional)
🔸 For Cooking:
🛢️ Oil or Ghee – for greasing the tawa
👩🍳 Steps to Prepare:
Step 1️⃣: Prepare the Batter

In a mixing bowl, add rawa, curd, and salt.

Slowly add water and whisk into a smooth, lump-free batter.

Let the batter rest for 10–15 minutes.

Add more water after resting if needed.

Just before cooking, mix in baking soda (optional).
Step 2️⃣: Prep the Toppings

In a bowl, mix chopped onion, tomato, green chili, carrot, and coriander.

You can also keep toppings separate if preferred.
Step 3️⃣: Cook the Uttapams

Heat a non-stick or cast-iron tawa on medium heat.

Lightly grease with oil or ghee.

Pour a ladle of batter and spread it into a small thick circle.

Quickly sprinkle toppings and press them gently.

Drizzle oil or ghee along the edges.

Cover and cook for 2–3 minutes until the base is golden.

Flip carefully and cook the other side for 1–2 minutes.
